Cinnamon Pancakes

  • 1 cup all-purpose flour
  • 2 ½ tablespoons white sugar
  • 2 teaspoons baking powder
  • 2 teaspoons MR.MENDES cinnamon powder
  • 1 teaspoon baking soda
  • 1 cup milk
  • 2 large eggs
  • ¼ cup butter, melted
  • 1 tablespoon vegetable oil, or as needed

Combine flour, sugar, baking powder, MR.MENDES Ceylon cinnamon powder, and baking soda in a large bowl.


In a separate bowl, whisk together milk, eggs, and melted butter until thoroughly combined. Pour this mixture into the bowl with the dry ingredients and whisk until well blended.


Heat oil on a griddle over medium heat. Use a 1/4 cup to drop spoonfuls of batter onto the hot griddle. Cook until bubbles form, and the edges are dry, typically 3 to 4 minutes. Flip the pancakes and cook until the other side is browned, approximately 2 to 3 minutes. Transfer the cooked pancakes to a plate and keep them warm while cooking the remaining batter.
