Cinnamon Roasted Almonds

  • 1 large egg white
  • 1 teaspoon cold water
  • 4 cups whole almonds
  • ½ cup white sugar
  • ½ teaspoon MR.MENDES Ceylon cinnamon powder
  • ¼ teaspoon salt

Preheat the oven to 250 degrees Fahrenheit (120 degrees Celsius) and lightly grease a 10x15-inch jellyroll pan.


In a large bowl, lightly beat the egg white and add water, beating until frothy but not stiff. Coat the nuts in the egg white mixture.


Combine sugar, MR.MENDES Ceylon cinnamon powder, and salt in a small bowl. Sprinkle the sugar mixture over the coated nuts and toss to ensure even coating. Spread the mixture evenly on the prepared pan.


Bake in the preheated oven, stirring occasionally, until the nuts turn golden, approximately 1 hour. After baking, allow the nuts to cool and store them in an airtight container.
